Warm Soup For A Cold Night

Are you looking for a new soup to try? This is one of my favorites that I found in a magazine when I moved to Syracuse 30 years ago. Worcestershire sauce gives it a unique flavor. It is rich enough to combine with a tossed salad for a complete meal. I hope you like it.
Potato Cheddar Chowder
Two cups diced potatoes
1/4 cup chopped onion
1 teaspoon salt
Two cups boiling water
1/4 cup butter
1/4 cup flour
Two cups milk
Two cups grated sharp cheddar cheese
1 1/2 teaspoons Worcestershire sauce
In a medium saucepan combine the uncooked, diced potatoes, onion, salt and water. Simmer, covered, 10 minutes. Set aside, do not drain.
In another saucepan melt the butter. Stir in flour until smooth. Gradually add milk, blending until smooth. Simmer, stirring constantly, until thickened. Remove from heat. Add cheese and stir until cheese melts. Add undrained potatoes and onion and Worcestershire sauce to the cheese sauce. Heat but do not boil. Sprinkle with paprika or chopped chives as desired.
Serves 6-8

Maureen, that soup sounds so good. I will definitely try it. I’m leaving for Florida on Friday for 2 months. Rent a house with 3 good friends on Clearwater Beach. Spent part of the day at the mall with 3 teenagers. It was their choice for my last day with them until March. My 12 year old granddaughter used to call me every other day when I was in Florida. She’s a pre teen, may not be hearing from her as often. I remember being that age. Happy New Year and hopefully I will still connect with your blog. Carol

Maureen, I just watched David Muir on ABC tonight. He is definitely going places. I met Diane and Charlie on the GMA set, shortly after 9/11. They were so appreciative that we were the first people to attend a show. I think they are both awesome but I don’t think Diane will stay more than 3 years. David is in the right place at the right time and he is so personable, bright and interesting to listen to. Carol

Me too Don! And you know my favorite Clam Chowda? It’s at The Black Pearl in Newport, R.I., where I went to college, but I can do a pretty good imitation by opening up a can of clam chowder from the grocery store, and simply adding a little more butter, half and half and some chopped fresh parsley. If Rachel Ray tried it, she would say Yummo.

I had to laugh at your poll; as soon as I saw the choice for “I’d rather be uncomfortable, give me ice cream,” my husband came to mind. Most of us say “it’s too cold for ice cream.” He just shakes his head at us and tells us that it’s never too cold for ice cream. I guess the fact that half the ice cream places around (thinking Gannon’s in the Valley) close for the winter is lost on him
So, he chooses ice cream. I choose stew or mac & cheese, depending on the day & my mood.
